Granola & Raspberry Muffins

A delicious Muffin recipe:


  • 250 ml cake flour
  • 10 ml baking powder
  • 2ml salt
  • 5ml ground cinnamon
  • 125 whole wheat flour
  • 80 granola
  • 60 ml dark brown sugar
  • 1 egg – lightly beaten
  • 125ml butter (melted)
  • 125 ml milk
  • 5ml finely grated lemon zest
  • 80 ml raspberry preserve
  • Glaze
  • 60ml brown sugar
  • 60ml granola
  • 2ml ground cinnamon
  • 30 ml butter – melted

How to make:

  1. Lightly grease a muffin tin and preheat oven to 180 deg c.
  2. Sift flour, baking powder, salt and cinnamon
  3. Add whole wheat flour, granola and sugar and combine.
  4. Make well in the centre
  5. Place egg, melted butter, milk and lemon zest in the well. Stir with a wooden spoon till ingredients are combined.
  6. Fill one third of each muffin mould. Spoon 5ml raspberry preserve, and top with remaining muffin mix.


  1. Combine the sugar, granola and cinnamon with the melted butter and gently spoon over the muffins.
  2. Bake for 20 – 25 minutes until nicely browned and firm.

Makes 12 Muffins
